Breck’s (Shepherd) Pie

Every year for Breck’s birthday he requests Shepherd’s Pie. He said this year was the best one yet so I thought I would share the recipe with you… Also, I named this one for my guy. I make this in a cast iron skillet and everything is made in the skillet except the mashed potatoes. I hope you enjoy!

  • 4 cups mashed potatoes (I use golden potatoes)
  • 1 tbsp olive oil
  • 1 lb ground beef
  • 1 small white onion
  • 2.5 tsp salt
  • 2 tsp black pepper
  • 1 tsp paprika
  • 2 tbsp minced garlic
  • 1 tsp rosemary (I just used fresh from our herb garden)
  • 1.5 tsp thyme
  • 1 tbsp tomato paste
  • 2 tbsp Worcestershire sauce
  • 2 tbsp flour
  • 1.5 cups beef stock
  • 2 cups frozen veggie mix (I used green beans, carrots, corn, and peas)
  • 4 tbsp melted butter
  • 1/4 cup heavy cream
  1. Preheat oven to 400 degrees.
  2. Wash potatoes, cut them in quarters, and put them in water to boil. Boil until potatoes are soft.
  3. In skillet pour olive oil, garlic, and onion. Sauté until onions are soft.
  4. Place ground beef into skillet and brown. Drain grease.
  5. Season beef with 1.5 tsp salt, 1 tsp black pepper, paprika, rosemary, 1 tsp thyme, tomato paste, and Worcestershire sauce. Mix really well until tomato paste is melted into beef.
  6. Mix flour in with seasoned beef and once well mixed pour beef stock slowly in. Let simmer for 10 minutes.
  7. Place veggies in skillet and mix well. Let simmer for another 10 minutes.
  8. While beef and veggies are simmering make mashed potatoes.
  9. Drain water from potatoes, pour in heavy cream, 2 tbsp butter, 1 tsp salt, and 1 tsp black pepper. Mash until creamy.
  10. Spread beef mixture evenly on bottom of pan. Spread mashed potatoes on top evenly.
  11. Brush melted butter on top of mashed potatoes. Run fork along mashed potatoes to match photos. Sprinkle rest of thyme on top of potatoes.
  12. Place skillet in oven and cook until golden brown. Around 10-15 minutes.
  13. Let cool for 7 minutes before serving.
